Complete Uninstall inc all volumes cleanup

Hi Team, due to an issue with the current Zerto 3.5 we have decided to uninstall completely and re-install the latest version. As the sites are showing disconnected what is the best way to clean up the old replicated VMs and do a fresh start? I need to ensure there are no remnants taking up space / causing confusion before re-install and initial sync again.
Also, there is a specific datastore volume existing that appears to have journal entries, how do I select this volume as the target for the new v6 install, I can’t recall seeing that as an option. But I’ll have another run through the install in my lab.
